Call me crazy, but when I decided to kick my sugar habit and become a vegan, I certainly didn't plan on giving up dessert. Wait. Hold the phone. Exactly how can you make dessert without sugar... and cream... and butter?, I hear you say. Well, it's easier than you think. In fact, it was one of the reasons I started The Sexy Sugar Free Vegan Project – all of my friends were cool with giving up sugar for dinner and lunch... but dessert, this caused a few tears and tantrums!
So, I set out to make sugar-free dessert so damn scrumptious, we wouldn't even feel like we were missing out! It wasn't long before I was whipping up guilt-free chocolate, kind-to-my-body truffles, marvellous mousses and waistline-loving meringues. And the best part? Since there's not a single grain of the white stuff in any of them, my inner 'sugar monster' was finally vanquished – along with my habit of going for seconds. Errr, and thirds...
So let's start with a real winner, my Salted Caramel and Choc Chip Brownies! Hooray! What's more, there's no gluten either. Ah-mazing!
a note on sweeteners
For many reasons, which you can read more about here, the only sweetener I use is organic brown rice syrup. It's made from natural brown rice, is deliciously sweet, and contains absolutely no fructose (that's the addictive part of sugar). Here's how to use it...
1 cup almond butter
11/4 cup rice malt syrup
3/4 cup coconut oil (melted)
1 tbsp vanilla bean paste
2 tsp cinnamon
1/2 tsp fine crystal salt
Put all ingredients for the salted caramel into a high powered blender or food processor. Blend on high for approximately 5 minutes, scraping the sides down periodically until a very sticky smooth sauce is achieved.
Sugar free Chocolate Chips
1 tbsp almond butter
2 tbsp coconut butter (melted)
1 1/2 tbsp raw cacao powder
1 tbsp rice malt syrup
1 tsp coconut flour
a pinch of pink crystal salt
Combine all ingredients, stirring with a spoon until smooth and well
combined. Pour into a small lunchbox or takeaway container, lined with
baking paper. Cover and freeze for 15 minutes. Chop roughly into small
chips. Once you master this method of making your own chocolate with coconut butter... well, nothing's gonna hold you down. Try Sarah Wilson's Raspberry Ripe, for example, and you'll never go back to sugar-based chocolate again.
