I guess my timing on this recipe is a little out, since it would have been handy around Halloween or Thanksgiving to have a recipe that uses up your pumpkin leftovers. Nevertheless, its a pretty delicious substitute for the standard sugary Christmas fare too! The bonus, of course, is that it's full of nutritious goodies like nut oils, antioxidants and pumpkin's unique combo of disease-fighting phytonutrients, carotenoids (alpha-carotene and beta-carotene). See? Dessert is good for you!
p.s. I've read that apples are fairly low in fructose, and this recipe calls for all the juice to be squeezed out first, so I'm feeling thats okay... but please feel free to omit this ingredient, if you wish. Oh, and its gluten free too – yum!
